CHOCOLATE PEPPERMINT MOLTEN CAKES

Ingredients
1/2 Cup Unsalted Butter
5 oz. High Quality Bittersweet Chocolate (Valrhona or Scharfenberger)
2 Large Eggs
2 Egg Yolks
1/4 Cup Natural Cane Sugar
2 tsp. Whole Wheat Pastry Flour
1 tsp. Peppermint Extract
Pinch of Salt
Candy Cane for Garnish

Instructions
Oven at 450’
1. Set a glass bowl over a pot of gently boiling water (double broiler). Break up the the chocolate, and add it and the butter into the glass bowl. While the mixture is melting, whisk the eggs, egg yolks and sugar together in another bowl until light and thick.
2. When chocolate is almost completly melted remove from the heat, stir to release some heat as it should be quite warm. Slowly pour in the eggs, peppermint extract, pinch of salt and then quickly beat in the flour until just combined.
3. Butter and flour four 4-ounce ramekins, tap out excess flour. Pour the chocolate mix evenly amongst the ramekins. At this point, you can keep them in the fridge for several hours, and simply bring them to room temperature before baking. Otherwise, bake them on a baking sheet for 6 to 7 minutes MAX, centers will be soft. Allow to sit for 3 minutes.
4. Invert the ramekin onto a plate, let them sit about 10 seconds and give the bottom a little tap, then lift. Sprinkle with candy cane, serve immediately. Accompany with unsweetened whipped cream or ice cream if desired.

I’d always heard rumors of people making their own almond milk but I assumed it was a super difficult process. I was pleasantly surprised when I finally built up the courage to make it. It’s really easy, and oddly fun.

To make Raw Almond Milk:

What you’ll need:

1 cup raw almonds

2-3 cups of water

vanilla extract (optional)

blender

cheesecloth/muslin/pantyhose 

What you’ll need to do:

Combine almonds and water. Let sit overnight. Blend together and pour into a jar lined with cheesecloth/muslin/pantyhose. Let this separate the milk from the leftover almond chunks. Make sure to give the cloth a good squeeze when you’re done to get as much out as you can. Refrigerate and enjoy!

Glitter jars - 
I was taught about glitter jars during my time as an inpatient. I learnt the magic of glitter during a self-soothe class as part of an emotional coping skills lesson.
There’s no science, no counting, no acceptance and no forceful methods involved in the alteration of your emotions during use of the glitter jar - just distraction. 
Making a glitter jar is simple. You will need:
1 jar (with a lid of course!)
1/10 vegetable oil
9/10 water
glitter - lots of!
food colouring
anything else shiny
Add the water and vegetable oil together. Add a few drops of food colouring, all of the glitter and anything else shiny. Put the lid on (tight!) and shake it.
When you want to cut / binge / scream / cry, shake the glitter jar and watch until the glitter is settled. It’ll calm you and hopefully the emotion will pass.

I’m going to make one tomorrow!

85 calorie Chicken Noodle Soup!

I think everyone (even vegetarians like me) needs to have a great, easy to make chicken noodle soup recipe in their back pockets. Today I pulled out my childhood favorite for my sick boyfriend to brighten his day and help him get better. You don’t have to be sick to enjoy this soup though, it’s actually incredibly easy to make and is filled with healthy lean protein. Any type of squash- zucchini, yellow, even butternut- would be great in this soup too!
